The supper cook’s guide

The essentials behind great one-pot and oven suppers: the right equipment, safe cooking temperatures, smart storage and a calm approach to getting dinner on the table.

The kit

What you need for supper cooking

  • A heavy casserole or Dutch oven for braises, stews and pot roasts.
  • A large ovenproof skillet for searing and finishing in the oven.
  • A roomy baking dish for pies, gratins and bakes.
  • A digital thermometer to cook meat and fish safely without overcooking.
  • A sharp knife and big board, because comfortable chopping saves time.

Supper planning made simple

Batch the base

Cook a double batch of onions, stock or tomato sauce at the weekend to speed up weeknight suppers.

Freeze in portions

Stews, braises and pies freeze well for up to three months. Label with the name and date.

Defrost safely

Thaw in the fridge overnight, never on the counter, then reheat until steaming hot.

Keep a backup supper

Pasta, a tin of tomatoes and some cheese mean you’re never stuck.

Mind the clock

Slow dishes for weekends, 30-minute skillets for busy weeknights.

Share the work

One person cooks, another sets the table and someone else clears up.
